October is breast cancer awareness month. This month, Arnaud’s will be participating in “NOLA goes pink”. This will be New Orleans’ first month long, citywide top chef event to benefit breast cancer awareness.
Each week In October Arnaud’s executive Chef, Tommy Digiovanni, will be creating a special entrée for $31.00. 10% of the proceeds from each entrée will go to the Susan G. Koman for the Cure Foundation, New Orleans Affiliate. Most of us know someone who has been affected by breast cancer, so throughout the month of October show your support by participating in the “NOLA goes pink” top chef event! Week One
Braised free range breast of chicken with agave, ginger blueberry glace, brown rice and Swiss chard.
Week Two
Free range breast of chicken with brown rice pasta, basil garlic, extra virgin olive oil and roasted Brussels sprouts.
Week Three
Seared Salmon with bulgur wheat, spinach and pine nut on puree of celery root and thyme.
Week Four
Seared Salmon with braised Brussels sprouts with a green tea reduction.
